Matar is abundantly available in winter season. I like to make the most of it by preparing various kinds of curries or snacks with it. The simplest of it is aloo matar ki sabzi with a simple masala. The crunch of peas and the flavor of masala is totally enticing. The dish tastes the best when paired with urad dal puri.

Dry ingredients for masala :
- Whole turmeric
- Dry Red Chilli
- Cloves (Laung)
- Black pepper
- Cardamom ( Elaichi badi and green both)
Wet ingredients For masala
- Green Chili
- Heeng dissolved in water.
- salt to taste
- Kasuri methi – a pinch
Step 1. Soak all the dry ingredients in water for 30 mins.
Step 2. Grind both the dry and wet ingredients in a mixer to make a smooth and fine paste.
Step 3. Heat mustard oil in Pan
Step 4. Add the ground masala and cook for some time till oil separates.
Step 5. Add boiled potatoes and mix well.
Step 6. Add salt
Step 7. Add green peas and mix well.
Step 8. Add Kasuri methi
Step 9. Add water as per required consistency. And cook by covering the pan.
Step 10. Dissolved heeng water in boiling vegetable.
Step 11. Cook for some more time on low flame and garnish with green coriander leaves.
