Dum Aloo or Alur dom with baby potatoes is a recipe that we all look forward to every winter in India. Dum Aloo or Alur dom is the traditional food recipe prepare mostly in north and east of India. Aloo or Potato is having high carbohydrate values and good in the chilling winter season in India.

  • Small baby potatoes – 500gms
  • Tomato puree – ½ cup
  • Refined oil – 3/4th cup
  • Coriander-Cumin powder – 1tsp
  • Hing – 3pinces
  • Bay leaves – 2
  • Cumin seeds- 1tsp
  • Dry red chili- 2
  • Kashmiri Chilli powder – 1tsp
  • Turmeric powder – 1tsp
  • Green peas – 1/2 cup
  • Garam Masala – ½ tbsp
  • Green chilies- 3
  • Salt – according to taste
  • Saloni Mustard Oil – 1/2 cup


Step 1. Boil and peel potatoes.

Step 2. Mix all the powdered masala except garam masala and hing in a small bowl with little warm water to make a thick paste.Cover it and keep it aside.

Step 3. Add salt and turmeric powder to the potatoes.

Step 4. Heat oil in a pan.

Step 5. Fry the potatoes for 2-3 minutes.

Step 6. Take them out.

Step 7. Now add bay leaves in the remaining oil. Add cumin seeds and dry red chilies.

Step 8. Then add the masala paste and fry on a low flame.

Step 9. Now add tomato puree and hing and slow cook till the oil separates from the masala.

Step 10. Add fried potatoes. Stir well.

Step 11. Add half a cup of warm water.

Step 12. Add green peas. Cover and cook on a low flame.

Step 13. When the water dries up, add garam masala powder. Stir well.Cover it for 5 minutes.

Step 14. Serve Dum aloo or alor dom hot with pooris and parathas.

Note: While boiling potatoes, do not peel it before boiling. It won’t taste good.
