My love for cooking started after my successful attempt of Mezze Platter. I didn’t love cooking, for me, it was an obligation to make food. Once I tried this dish in a restaurant ordered by my friend, I thought to give it a try at home. I checked out some recipe sites and youtubed. Finally, with my series of alternatives, it came out very nice. Everyone at my home loved it and got lots of appraisals. And thus I started loving cooking.This is my first innovation and will continue for more.

For Hummus

  • 250gm chickpeas(soaked overnight and cooked)
  • juice of 1 large lemon
  • 1/2 tablespoon grounded cumin
  • roasted sesame seeds (1 1/2 tablespoon)
  • salt (to taste)
  • olive oil(2 tablespoons) plus more for garnishing
  • One small garlic clove, minced

For falafel

  • 250gm chickpeas(soaked overnight and cooked)
  • 1 small onion chopped
  • 1 small garlic clove, minced
  • chopped coriander leaves(3 tablespoons)
  • red chili powder(1/2 tablespoon)
  • coriander powder(1 teaspoon)
  • cumin powder(1 teaspoon)
  • black pepper(1/4 teaspoon)
  • 1 tablespoon all-purpose flour
  • salt (to taste)
  • oil(for frying/shallow frying)

For Salad

  • Chopped onion(2 tablespoons)
  • Chopped zucchini(2 tablespoons)
  • Chopped tomato(2 tablespoons)
  • Salt(to taste)
  • red pepper(a pinch)
  • pomegranate seeds (for garnishing)

For white sauce

  • Mayonesse(1 tablespoon)
  • hung curd(1 tablespoon)
  • salt(to taste)
  • white pepper(a pinch)

Pita Bread


Directions for Hummus
Step 1. Add all the ingredients for hummus in a food processor and process to make a smooth paste. You can add 2-3 tablespoon water(not more) if needed.
Step 2. Adjust the taste of salt as needed. Hummus is ready to serve. Use some olive oil for drizzling.

Directions for falafel
Step 3. Grind chickpeas in a food processor to make a smooth texture. You can add 2-3 tablespoon water(not more) if needed for grinding.
Step 4. In a bowl, add the above mixture. Add other ingredients and make a semi coarse mixture.If the mixture is too sticky add some more all-purpose flour.
Step 5. Adjust the taste of spices as per your taste.
Step 6. Make small tikkis from the mixture and keep them aside for some time(half an hour approx)
Step 7. You can now deep fry falafel, or you can also shallow fry them. Falafel is ready

Directions for salad
Step 8. Add all the ingredients for salad in a bowl and salad is ready to serve.

Directions for white sauce
Step 9. Add all the ingredients for sauce in a bowl and sauce is ready.

You can get pita bread from the market. Cut it into slices and serve. You can warm it a little bit on tawa before serving.

For final Mezze Platter presentation, arrange all the above as I have done. Mezze Platter is ready to serve.

You can store hummus in a container in fridge for a week
