Stuffed Karela is a simple recipe which has simple ingredients. Also, the taste of stuffed karela increases exponentially when prepared in mustard oil. The reason for choosing this recipe is that karela is a very versatile vegetable. We need to be creative and innovative to bring out all the flavors and goodness of karela.

For the stuffing :

  • Dried anardana – 1 tsp
  • green chilies – 8
  • Salt to taste
  • A pinch of turmeric powder
  • 1 tsp red chili powder
  • two medium sized onions


Step 1. Peel bitter gourds.

Step 2. Make a horizontal slit in each of it ensuring that a pocket is made.

Step 3. Rub salt onto each of it and let it rest for two hours.

Step 4. Take a small grinder jar and grind dry anardana.

Step 5. Add green chilies and grind it into a fine paste without adding water.

Step 6. Add salt, red chili powder and turmeric powder.

Step 7. Add the two medium sized onions and grind into a fine paste.

Step 8. Add this masala to the bitter gourd pockets.

Step 9. Wash and peel onions.

Step 10. Make two perpendicular slits on each of these onions ensuring that the whole onion is intact.

Step 11. Fill the onions with the masala paste.

Step 12. Add mustard oil in an iron kadai.

Step 13. Let it come to a smoking point.

Step 14. Switch it off.

Step 15. Let cool.

Step 16. Now, switch it on on low flame.

Step 17. Place the stuffed karela and onions with the stuffing part on the upside.

Step 18. Cover this with a lid and cook for 15 minutes.

Step 19. Switch it off and serve Stuffed Karela with hot parathas.
